Man in Iceland uses volcano to bake his bread (CCSS Level: Grade 6, Words: 342)

Viktor Sveinsson uses the natural hot springs in his home town of Laugarvatn, in Iceland to bake an Iceland rye bread, or "Volcano bread," as a viral video calls it. Alison Grasso, a New York video maker, filmed Sveinsson making his bread by simply using the heat of the volcanic activity underground.

Using rye flour, wheat flour, sugar, baking powder, milk and a bit of salt, Sveinsson mixes up his dough, which he then puts into a metal pot and seals with plastic film. What he does next is quite amazing. He buries it in the steaming earth nearby to his home. The temperature of the ground varies a bit, but where he puts his bread to cook it is always a toasty 100 degrees Celsius.

One of the reasons that Iceland is so special is that it is on a geologic hotspot, and so Earth's inner hot core is quite close to the surface. There are fiery volcanos, bubbling hot pools and spouting geysers. All this volcanic energy is put to great use by the residents. Amazingly almost all of Iceland's electricity is made using the natural resource of the Earth's heat.

But way before geothermal power plants were invented, locals were already using the free heat to warm their homes and cook their food. They washed in it and baked with it. One very famous bread is called "hot spring bread", which is very hard to pronounce in the local language. Sveinsson makes Icelandic rye bread the old way - no electricity needed. He just finds a nearby local patch of sand where a hot spring heats the earth to a scalding 100 degrees Celsius, then he digs a small hole, drops his pot of rye bread in, then takes it out again after about 24 hours.

The long, steady low-temperature gives his bread a cakey texture, almost like a traditional English steamed pudding. Just the fact that it's cooked by the earth is enough to make it a favorite. Now I can't wait to visit Iceland to taste it!
